Sweet and Sour Chicken

- 1 Large Saucepan for cooking rice
- Large Mixing Bowls for sauce and veggies
Ingredients
For the Rice
- 300 g For the Rice
- 600 ml Cold Water
- Salt Flakes for teste
For the Chicken and Vegetables
- 3 bell Peppers (Capsicum)
- 1 Brown Onion
- 4 Cloves Garlic
- 1.5 kg Chicken Breast
Instructions
Prepare the Rice
- Rinse 300g of basmati rice under cold water to remove excess starch.
- Combine it with 600ml of cold water and a pinch of sea salt flakes in a large saucepan.
- Stir gently to separate any clumps.
Cook the Rice
- Bring the water to a boil, then cover with a lid and reduce heat to low. Let the rice simmer undisturbed for 14 minutes
- After 14 minutes, turn off the heat, but keep the lid on for another 4 minutes
- Fluff the rice with a fork to separate the grains
Step 5: Cooking the Vegetables and Chicken
- Heat 30ml of grapeseed oil in a large pan over high heat.
- Add the onions and bell peppers with a pinch of sea salt flakes. Sauté for about 4 minutes or until caramelized, then remove from the pan and set aside.
- Cook the Chicken
- Add another 20ml of grapeseed oil to the pan.
- Once hot, add the diced chicken with another pinch of sea salt. Sear for about 6 minutes, stirring halfway to ensure even cooking.
